Hi Kevin,
I taught a similar undergraduate capstone course at Cardinal Stritch University a few years ago, and am attaching that syllabus. Hopefully you will find it useful. As matter of fact, we had a large number of students that term, but instead of splitting the course into two sections, I co-taught that course with a colleague. It ended up being one of the best courses I have ever taught, and a few weeks ago I met with an alumna of the program there, and she said that was her favorite course of her undergraduate degree, partly because of how my colleague and I complemented each other in the course. If you have the opportunity to do something like that, I highly recommend it.
