Diversity is an unusual course, in that there are so many different ways to approach it and thus so many different structures and contents. What do you want your students to get out of it? Do you want them to understand the behavioral and psychological principles that make diversity such a challenge? Do you want to take an international approach, or focus on the U.S.? Do you want them to understand the specific histories and challenges faced by different identity groups? Do you want them to understand how diversity relates to performance and what organizations can and should do to manage diversity? Do you want to change their hearts and attitudes? Do you want them to learn how to intervene when they encounter discrimination? Do you want them to become activists? How do you weight the above goals and any other goals you might have? I think selection of a text should depend on your decisions and should follow your course design. Over the years, I've used a text that fit my structure, but have included numerous other sources, such as TED talks, "Last Week Tonight" episodes, EEOC websites, newspaper articles, etc.
That said, here are some text options:

· Syed & Ozbilgin (editors). 2015. Managing diversity and inclusion: An international perspective. Sage.
There are also casebooks and books of readings, such as

· Hannum, McFeeters & Booysen (editors). 2010. Leading across differences (casebook). Pfeiffer.
