I haven't been teaching on multicultural issues recently, but please, find attached my syllabus from 2 years ago (advanced level course). I hope you may find it useful.
My favourite piece for teaching (it's not actually mentioned in the syllabus directly) was Romani, L., Primecz, H. and Bell, R. (2014) 'There Is Nothing so Practical as Four Good Theories'. Chapter 1 from B.Gehrke, M.-T. Claes (eds) Global Leadership Practices: a cross-cultural management perspective. 2014 Palgrave McMillan
I think it's a very good resource to start advanced discussion of cultural issue.
