The Pew Forum on Religion and Public Life (2008). has religiousity data. Pesta et al, (2010 Intelligence) used it in estimating well-being by state. At both the individual and state level, religiousity is inversely correlated with IQ.
There are two topics that seem to irritate people when one exmaines them in research contexts. One if the study of demograpgic differences (e.g., sex, race, age) and the other is the study of religious belief, You are combining two of the more irritaing topics into one research project. It should be a fun study. I hope you are tenured.
