I have tried two different types of online projects. One was co-constructed by the teams for a project management course. They had to find a project they wanted to work on. Most of the students were in an applied design program and several teams were trying to create products for market in other classes. I set up broad criteria and each team submitted a proposal that I used the grading criteria. That may not work in 8 weeks, but I believe co-construction is very successful and creates more involvement.
The second was for an Internet Marketing course and I found a project online through the UN Online Volunteers. This one might be a better fit for you. Even if you don't do an actual project that is listed, you may be able to find an RFP as an example or an organization that you can create something for.

I'm looking for clever ideas on shifting a traditional, face-to-face grad strategic management course that required group community/consulting projects to an asynchronous 8 week accelerated online course that will still have some level of engagement or interaction with the local community or at least an outcome that could be useful for local business, etc.
