I suggest that you create the course as you go along. This will certainly make you a better impromptu speaker. ;)
Use the first class as an introduction to explain how the class will work, assignments, etc. But, tell them to come up with a list of a dozen current topics of interest within international culture. Make that list due by two or three days prior to the next class. Then combine the lists, and pick the ones that match the learning objectives of the course most closely. Then apply your own framework for structuring each session. I'd love to be a fly on the wall during the discussions!
