Amy,
You may find "Great Minds in Management" by Ken Smith and Mike Hitt to be a valuable resource introducing many major OB, OT, and strategy theories. It's readable and offers you the option to pick and choose the perspectives best suited to the course. Of course, work from the Carnegie school (Simon, 1948; March & Simon, 1958; Cyert & March, 1963) also addresses micro behavior in an OT context, though it may not be as readable for undergrads. Good luck; your class sounds like fun.
